Asian Noodle Salad Recipe


  • 250 gm Rice noodles
  • 200 gm Baby corn, sliced
  • 200 gm Mangetout, shredded
  • 200 gm Jar red peppers in bring, liquid removed and sliced
  • 100 gm Roasted salted cashew nuts
  •     Fresh coriander, to garnish
  • 2 1/2 x Cm piece fresh ginger, grated
  • 1 x Garlic clove
  • 1 tsp Light muscovado sugar
  • 2 Tbsp. Soy sauce
  • 2 Tbsp. White wine or possibly sherry vinegar
  • 6 Tbsp. Extra virgin olive oil
