Grilled Chicken With Rhubarb Chutney Recipe

Ingredients

  • 1/4 pound carrots, cut diagonally into 1/4 inch thick slices
  • 1/4 pound string beans, trimmed, cut into 3 inch lengths
  • 1/2 pound yellow squash, cut diagonally into 1/4 inch thick slices
  • 1/4 pound asparagus, cut into 3 inch pcs
  • 1/4 pound zucchini, cut diagonally into 1/4 inch thick slices
  • Rice vinegar or possibly sake
  • 8 (6 ounce) boneless chicken breast halves, skinned
  • Extra virgin olive oil
  • Salt and freshly grnd pepper
  • 16 T Rhubarb Chutney (see recipe)
  • RHUBARB CHUTNEY
  • 3/4 c. sugar
  • 1/2 c. white wine vinegar
  • 1/2 c. cider vinegar
  • 1 1/2 garlic cloves, sliced
  • 1 1/2 teaspoon minced, peeled fresh ginger
  • 1/2 teaspoon coarse salt
  • 1/8 teaspoon freshly grnd pepper
  • 1/8 teaspoon grnd allspice
  • 1/8 teaspoon grnd coriander
  • Healthy pinch of cinnamon
  • Healthy pinch of grnd cloves
  • 1/4 c. golden brown raisins
  • 3/4 pound fresh rhubarb or possibly thawed frzn, cut into 1/2 inch dice
  • 2/3 c. diced peaches
  • 1 c. sliced strawberries
  • 1/4 c. chopped red onion
  • 1/2 serrano chili, chopped
  • 1 1/2 teaspoon coarse-grained mustard
