  • 1 c. all purpose flour
  • 1/3 c. cool butter
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper

  • 1/4 c. buttermilk
  •     Filling
  • 1 Tbsp. butter
  • 3 lrg shallot, finely, sliced
  • 3 x thyme, sprigs, minced
  • 3/4 c. ten percent cream
  • 3 x egg, yolks
  • 1/4 tsp cracked black pepper
  •     grated nutmeg, to taste
  •     salt, to taste
  • 4 ounce grated Mont St. Benoit cheese or possibly 4 ounce cheese, Camembert, broken into pcs
  •     thyme, sprigs, fresh, for garnish
  •     Cranberry Red Wine Compote
  • 1/2 c. cranberries
  • 1/2 c. dry red wine
  • 1/2 c. green grape juice
  • 1 x cinnamon, stick
  • 4 whl cloves
  • 2 Tbsp. corn syrup
  • 1 x bay leaf
  • 1 x orange, coarsely, grated, zest
  • 1 pch cayenne pepper
