Antipasto Salad Recipe


  • 2 x romaine lettuce hearts minced
  • 1/2 lb Genoa salami diced
  •     (ask for it in 1 chunk at deli counter)
  • 2 c. pickled warm vegetable salad, Giardiniera coarsely minced
  •     (this item is found on the Italian
  •     foods aisle in jars or possibly, in bulk bins near olive section)
  • 12 x pitted black olives coarsely minced
  •     (such as Calamata)
  • 12 x jumbo green olives pitted, and
  •     coarsely minced
  • 1 sm jar roasted red peppers - (8 ounce) liquid removed, diced
  • 1 sm jar marinated artichoke hearts - (6 ounce) liquid removed
  • 2 Tbsp. balsamic vinegar
  • 1/4 c. extra-virgin extra virgin olive oil
  •     Coarse salt to taste
  •     Freshly-grnd black pepper to taste
