- 1/2 lb dry salted fish

- 6 slc thick-cut bacon
- 4 Tbsp. butter or possibly coconut oil
- 3 lrg onions minced
- 1/2 tsp cayenne
- 4 x garlic cloves chopped
- 1 x green bell pepper sliced into strips
- 1 x red or possibly yellow bell pepper sliced into strips
- 2 x thyme sprigs
- 6 x green onions finely minced
- 1/4 x warm red pepper finely minced
- (such as Scotch bonnet)
- 1/4 tsp grnd allspice
- 1 can whole tomatoes - (28 ounce) broken by hands
- 2 can ackee* - (18 ounce ea) liquid removed
- Salt to taste
- Freshly-grnd black pepper to taste
