Ackee And Saltfish Recipe

Ingredients

  • 1/2 lb dry salted fish
  • (such as cod)
  • 6 slc thick-cut bacon
  • 4 Tbsp. butter or possibly coconut oil
  • 3 lrg onions minced
  • 1/2 tsp cayenne
  • 4 x garlic cloves chopped
  • 1 x green bell pepper sliced into strips
  • 1 x red or possibly yellow bell pepper sliced into strips
  • 2 x thyme sprigs
  • 6 x green onions finely minced
  • 1/4 x warm red pepper finely minced
  • (such as Scotch bonnet)
  • 1/4 tsp grnd allspice
  • 1 can whole tomatoes - (28 ounce) broken by hands
  • 2 can ackee* - (18 ounce ea) liquid removed
  • Salt to taste
  • Freshly-grnd black pepper to taste
