Hot Boudin Recipe

Ingredients

  • 4 c. Water, (up to 5)
  • 3 1/2 tsp Kosher salt
  • 3 lb Pork butts, cut into 2 inch cubes, (with some fat attached)
  • 4 x Bay leaves
  • 2 whl chili peppers
  • 2 tsp Black pepper, freshly grnd
  • 1 pch Dry thyme
  • 1 x Onion, medium, peeled and quartered
  • 1 c. Long grain rice
  • 2 tsp Garlic, chopped
  • 1 tsp Grnd sage
  • 1 tsp Dry thyme
  • 2 tsp Red pepper flakes
  • 2 tsp Cayenne
  • 1/8 tsp Allspice
  • 1 pch Grnd mace
  • 1/2 c. Finely minced green onions or possibly scallions
  • 1/2 c. Fresh parsley, finely minced, (flat-leaf variety preferred)
  • 2 1/2 tsp Salt, kosher preferred
  •     md Hog casings, (optional)
