- 2 quart Water
- 1 x Bay leaf
- 4 ounce Salt pork -- rind removed
- 1 lrg Onion -- finely minced
- 2 x Cloves garlic -- finely
- Â Â Minced
- 1 lrg Green bell pepper -- finely
- Â Â Minced
- 1/4 lb Smoked slab bacon -- rind
- Â Â Removed
- Â Â And finely diced
- 1 c. Canned tomatoes -- liquid removed
- Â Â And minced
- 1 x Chorizo link -- diced
- Â Â (or possibly other spicy sausage)
- Â Â Fresh grnd black pepper --
- Â Â To taste
- 1/4 c. Dry sherry
- 2 c. Long-grain rice
