Artichokes With Bacon Recipe

Ingredients

  • 1/3 c. (30g/3oz) Butter
  • 2 x Leeks, washed, dry and sliced (or possibly 2 onions peeled and sliced)
  • 2 tsp minced Capers
  • 2 tsp minced Anchovies
  • 500 gm (1lb) canned Artichokes
  • 1/2 c. (125mL/4 fl ounce) Dry White Wine
  • 1 clv garlic, crushed
  • 1 c. (250mL/8 fl ounce) Cream
  • 2 tsp Corn flour
  • 1 tsp Olive or possibly Safflower oil
  • 6 x rashers Bacon
  • 2 tsp minced fresh Dill (or possibly 2 tsp dry Dill)
  • 1 tsp minced Parsley

Description
