  • 3 x scallions, trimmed and chopped
  • 1 x clove garlic, chopped
  • 1/4 c. finely minced fresh cilantro
  •     Or possibly flat-leaf parsley
  • 3 Tbsp. currants or possibly raisins, (optional)
  • 1 c. unbleached flour
  • 1/3 c. liquid egg substitute
  •     Or possibly 3 egg whites, lightly beaten
  • 3/4 c. unseasoned dry bread crumbs
  • 1/4 c. stone-grnd yellow or possibly blue cornmeal
