  • 1 x (1 lb) medium aubergine
  • 1 tsp Salt
  • 1 c. Vegetable broth
  • 3/4 c. Minced onion
  • 3 lrg Garlic cloves, chopped
  • 6 x Ripe Roma tomatoes, minced (2 c.)
  • 1 lrg Red bell pepper, seeded, and minced (1 1/4 c.)
  • 1/4 tsp Crushed red pepper flakes
  • 3 Tbsp. Tomato paste
  • 1 tsp Sweetener of your choice (honey, sugar, etc.)
