  • 4 x kaffir lime leaves fresh or possibly dry
  • 2 x limes juiced
  • 2 Tbsp. Thai fish sauce
  • 1 can unsweetened coconut lowfat milk - (13 ounce)
  • 1 Tbsp. Thai red curry paste
  • 1 pch paprika
  •     Rice flour for dredging
  • 1 lb large shrimp peeled, deveined
  • 2 Tbsp. peanut oil
  • 2 doz mussels steamed
  • 1 bn asparagus tips only
  • 8 ounce shiitake mushroom caps sliced
  • 1 lb fresh Udon noodles
  • 12 x pea tendrils
  • 1/2 c. roughly-minced mint leaves
  • 1/2 c. roughly-minced cilantro leaves
  • 1/2 c. minced cashews
  •     Daikon sprouts for garnish
