Ingredients

  • 8 x Cloves of Garlic, unpeeled
  • 4 x Dry chiles Anchos stemmed,seeded,deveined about 2 ounces
  • 6 x Dry chiles Guajillos stemmed,seeded,deveined about 1 1/2 ounces
  • 1/2 x Inch stick cinnamon about 1/2 t grnd
  • 1 x Clove, or possibly a healthy pinch grnd
  • 10 x Black peppercorns scant 1/4 t grnd
  • 2 lrg Bay Leaves broken up
  • 1/8 tsp Cumin seed, or possibly 1/8 t grnd
  • 1/2 tsp Dry Oregano
  • 1/2 tsp Dry Thyme
  • 11/2 tsp Salt
  • 1/4 c. Cider vinegar
