  • 1/2 c. Extra virgin extra virgin olive oil
  • 4 x Plum tomatoes, peeled and cut in 1/8-inch dice
  • 1/4 c. Nicoise olives, minced coarsely
  • 1/4 c. Minced Italian parsley
  • 1 Tbsp. Minced garlic
  • 1 Tbsp. Fresh lemon juice
  • 1 Tbsp. Sea salt
