Asparagus Souffle Recipe


  • 2 1/2 lb fresh asparagus trimmed,
  •     and cut into 1" pcs
  • 2 x Large eggs beaten
  • 1 c. grated low-fat Swiss cheese
  • 1 c. diced cooked low-fat turkey bacon
  • 2 tsp canola oil
  • 2 Tbsp. Parmesan cheese
  • 1 Tbsp. cornstarch or possibly arrowroot pwdr
  • 1/4 c. low-fat low-sodium chicken broth
  • 2 x egg whites beaten till stiff
