  • 1 c. sugar
  • 1/2 c. vegetable oil
  • 3 T dark molasses
  • 2 large eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon cardamom (optional)
  • 1 c. walnuts, minced
  • 1 c. raisins or possibly diced dates (or possibly 1/2 c. each)
  • 1 (16 ounce) can applesauce
  • 2 teaspoon baking soda
  • 2 to 2 1/2 c. flour
