- 12 oz. chicken breasts, cut into strips
- 2 cloves garlic, minced
- 1 tsp chili powder (or less if you choose to)
- 4 Tbsp canola oil
- 1 medium onion, halved and thinly sliced
- 1 large green bell pepper, chopped
- 5 oz. frozen spinach, thawed and squeezed dry
- 2 c. purchased salsa (I use Newmanâs so I used 1 of the smaller jars)
- 4 â 6â³ corn tortillas, coarsely torn
- 6 oz. Monterey Jack cheese (reg or low fat)
- 1/2 c. cherry tomatoes, halved
- Corn chips or baked tortilla chips
