Stuffed Squash Recipe

Ingredients

  • 1/2 pound minced mushrooms
  • 1 c. minced onion
  • 1 clove crushed garlic
  • 1 c. cottage cheese
  • 1/2 teaspoon basil
  • 1/4 c. minced parsley
  • Salt, pepper
  • 3/4 c. bread crumbs or possibly cooked rice
  • 2 T dry white wine - butter
  • 2 med. cooking apples, minced
  • 2 c. cottage cheese
  • Juice from 1 lemon
  • 1/2 c. minced onion
  • 3 T butter
  • Dash of cinnamon
  • 3/4 c. grated Cheddar
  • 1/2 c. minced onion
  • 1 clove (lg.) crushed garlic
  • 1/2 teaspoon rubbed sage
  • 1/2 teaspoon thyme
  • 3-4 T butter
  • 1 c. coarsely-crumbled whole wheat bread
  • 1/4 c. minced walnuts
  • 1/4 c. sunflower seeds
  • 1 stalk minced celery
  • Juice from 1/2 lemon
  • 1/4 c. raisins (optional)
  • 1/2 c. grated Cheddar cheese
  • Salt and pepper to taste
  • 2 healthy beets (the size of a healthy fist)
  • 1 med. carrot (also in good health)
  • 1 lg. clove crushed garlic
  • 3/4 c. orange juice
  • Salt and pepper to taste
  • 2 T butter for saute
