Artichoke Frittata Recipe


  • 4 large eggs, slightly beaten
  • 6 saltine crackers, crushed
  • 1/4 pound grated cheddar cheese
  • Half of a green pepper, minced
  • 3 green onions with tops, sliced
  • 2 (6 ounce) jars marinated artichoke hearts, liquid removed and minced
  • Minced parsley
  • Dash of Tabasco sauce
  • Salt and pepper to taste


Saute Pepper And Onions In Small Amount Of Oil From Marinated Artichokes. Let Cool Slightly. Mix All Ingredients And Bake At 325 Degrees For 25 To 30 Min In 8 Inch Square Pan.
