Autumn Bisque Recipe

Ingredients

  • 4 large Butternut squash -- halved and deseeded
  • water
  • 3 shallots
  • 8 granny smith apples -- cored and peeled
  • and chopped
  • 2 cloves garlic
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon ground cloves
  • 3/4 cup brown sugar
  • 2 cups applejack brandy
  • 1 medium onion -- chopped
  • 3 stalks celery -- coarsely chopped
  • 3 carrots -- coarsely chopped
  • 3 1/2 quarts chicken stock
  • 1 cup heavy cream
  • 1/2 stick butter -- softened
  • cornstarch & water to thicken
