- 2/3 c. Diced hard tofu
- 1 c. Fresh pineapple chunks
- Â Â Well liquid removed (reserve juice For dressing)
- 1/3 c. Slivered almonds -- lightly
- Â Â Toasted
- 2 Tbsp. Finely minced scallions
- Â Â White part only
- 1 lrg Carrot -- finely minced
- 1/3 c. Raisins or possibly dry
- Â Â Cranberries
- 1/3 c. Minced water chestnuts
- Â Â SWEET SESAME DRESSING-----
- 2/3 c. Fresh pineapple juice
- Â Â (reserved from above
- 1 Tbsp. Sesame seeds -- lightly
- Â Â Toasted
- 1 tsp Grated ginger root
- 1 tsp Chopped garlic
- 1 tsp Brown sugar
- Â Â Splash soy sauce
- Â Â Splash brown rice vinegar
- Â Â Or possibly cider vinegar
