Almost Vegan Lasagna Recipe

Ingredients

  • 1 c. Green lentils, washed
  • 2 Tbsp. Extra virgin olive oil
  • 1 lrg Onion, diced
  • 1 med Carrot, thinly sliced
  • 1 1/2 c. Mushrooms, sliced
  • 2 x Garlic cloves, minced
  • 2 c. Tomatoes, diced
  • 2 Tbsp. Tomato paste
  • 1 Tbsp. Parsley
  • 1 tsp Oregano
  • 1 tsp Marjoram
  • 1 tsp Soy sauce
  •     Salt & pepper to taste
  •     Lasagna strips, sufficient for 3 layers
  • 3 1/2 c. Water
  • 1/2 c. Cashews
  • 1 tsp Salt
  • 1/2 tsp White pepper
  • 1 x Bay leaf
  • 1 x d Nutmeg
  • 1/4 c. Vegetable oil
  • 1/2 c. All-purpose flour
  • 1 1/2 c. Mozzarella style soy cheese Or possibly Italian style almond cheese (optional)
