  • 1 c. ricotta cheese
  • 1 c. plain yogurt
  • 1/4 c. packed brown sugar
  • 1 Tbsp. fresh lemon juice
  • 1 c. fresh pineapple chunks
  • 2 x tangerines peeled and sectioned (qv)
  • 1 c. red seedless grapes halved
  • 1 c. green seedless grapes halved
  • 1/2 c. dry cranberries
  • 1 c. shredded coconut toasted (qv)
  •     fresh mint leaves for garnish
