Aubergine Parmigiana Recipe


  • 2 x Aubergines
  • 1/2 c. Flour
  • 1 x Large eggs, slightly beaten (1 to 2)
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 c. Extra virgin olive oil
  •     Grated Parmesan cheese
  • 1 lb Mozzarella cheese, sliced thin
  •     Tomato sauce or possibly spaghetti sauce
