- 2 lrg cucumbers, peeled, seeded, and diced
- 1 med red onion, diced
- 4 x green onions, chopped
- 1 x red bell pepper, cored and diced
- 1 x yellow bell pepper, cored and diced
- 1/2 c. mayonnaise
- 1 Tbsp. extra virgin olive oil
- 2 x canned chopped jalapeno chiles
- 2 x cloves garlic, pressed
- Â Â Healthy pinch of salt
- Â Â Juice and grated zest of 1 large lemon
- 2 tsp grainy Dijon mustard
- Â Â Dash of Tabasco sauce
- 1 x ripe avocado, minced
- 1 c. black olives, coarsely minced or possibly halved
- 1/4 c. mixed minced Italian flat-leaf parsley and cilantro
