Ingredients
- 1 lb penne pasta
- 8 ounce green beans cut into 1inch pcs
- 1 sm red onion cut into 1/4 .inch dice
- 1 sm zucchini cut into 1/4 inch dice
- 1 x red bell pepper, seeded de ribbed and cut into 1/4 inch dice .
- 1 lrg ripe tomato seeded and diced (qv below)
- 1 c. nicoise olives pitted and halved
- 1/4 c. capers liquid removed and rinsed
- Â Â basil vinaigrette:
- 1 c. fresh basil leaves
- 1/2 c. extra virgin olive oil
- 1/4 c. white wine vinegar
- 2 clv garlic chopped
- 1 x salt and freshly grnd pepper to taste
- Â Â Cook penne according to package directions.
- Â Â Drain and let cold.
