Penne Salad Provencal Recipe

Ingredients

  • 1 lb penne pasta
  • 8 ounce green beans cut into 1inch pcs
  • 1 sm red onion cut into 1/4 .inch dice
  • 1 sm zucchini cut into 1/4 inch dice
  • 1 x red bell pepper, seeded de ribbed and cut into 1/4 inch dice .
  • 1 lrg ripe tomato seeded and diced (qv below)
  • 1 c. nicoise olives pitted and halved
  • 1/4 c. capers liquid removed and rinsed
  •     basil vinaigrette:
  • 1 c. fresh basil leaves
  • 1/2 c. extra virgin olive oil
  • 1/4 c. white wine vinegar
  • 2 clv garlic chopped
  • 1 x salt and freshly grnd pepper to taste
  •     Cook penne according to package directions.
  •     Drain and let cold.
