  • 1 x Bay leaf
  • 1 x Carrot,peeled and minced
  • 1 x Celery stalk,minced
  • 4 x Parsley branches
  • 1/2 tsp Salt
  • 8 c. Water,cool
  • 3 Tbsp. Butter
  • 3 x Leeks,white parts,sliced
  • 1/2 tsp Salt
  • 1 Tbsp. Parsley,minced
  • 7 c. Stock
  • 1/2 c. Light cream (opt)
  •     Pepper
  • 1 tsp Grated lemon peel
  •     Parmesan,grated,for garnish
