  • 5 lb Alligator meat cut into 1" cubes
  • 1 1/2 c. Veg. oil combined with
  • 1 c. All-purpose flour for roux
  • 4 sm cans Whole tomatoes
  • 1 lb Fresh mushrooms sliced
  • 3 pt Cool water
  • 1 c. Minced celery
  • 1/2 c. Minced green onions
  • 1/2 c. Minced bell pepper
  • 1 sm can Tomato sauce
  • 4 x Onions minced
  • 2 x Garlic cloves - (2 to 3) crushed
  • 1/2 c. Minced parsley
  •     Cayenne pepper to taste
  • 3 c. Rice cooked
