  • 1 med onion, minced
  • 3 lrg clov garlic, chopped
  • 1 lrg bell pepper, minced
  •     Freshly grnd pepper, to taste
  • 56 ounce Canned, peeled, whole tomatoes,
  •     liquid removed and juice reserved
  • 1/2 tsp salt or possibly to taste
  •     plus extra for salting aubergine
  • 1 lrg aubergine, (about 2 lbs.)
  • 1 Tbsp. chopped fresh basil
  • 1 tsp chopped fresh thyme
  • 1 Tbsp. chopped fresh parsley
  • 1/4 c. water or possibly vegetable stock, up to 1/3
  • 1/2 c. dry whole-grain bread crumbs, up to 1
  • 3/4 c. part-skim mozzarella cheese, coarsely grated
  • 1/4 c. freshly grated Parmesan, up to 1/2
