Aubergine Stuffed Greek Style Recipe

Ingredients

  • 2 med Aubergines -, (abt 1 lb ea)
  • 3/4 c. Extra virgin olive oil
  • 1 lb Grnd lamb or possibly beef
  •     (or possibly a mix of both)
  • 1 x Onion, minced
  • 2 x Garlic cloves, crushed
  • 1 tsp Dry oregano, hand crushed
  • 1 1/2 c. Greek Tomato Sauce, see * Note 1
  • 1 c. Kefalotyri cheese, see * Note 2
  •     Freshly-grnd black pepper, to taste
  •     Salt, to taste
