A1 Jalapeno Summer Sausage Recipe

Ingredients

  • 5 lb Grnd beef
  • 6 x Jalapeno peppers, seeded and minced
  • 1 Tbsp. Black peppercorns, cracked once
  • 2 Tbsp. Curing salt (kosher salt)
  • 1/4 tsp Garlic salt
  • 1 Tbsp. Liquid smoke
  • 1/4 tsp Mustard seed
  • 1/4 tsp Onion salt
  •     Mix all ingredients well.
  •     Form into 2 rolls and wrap tightly in foil.
  •     Chill 24 hours.
  •     Bake over broiler pan with water at 350 F. for 1 1/2 hours.
  •     Remove from foil after baking.
  •     Good served warm or possibly cool.
