Aubergine Parmesan Recipe


  • 1 Tbsp. extra-virgin extra virgin olive oil
  • 1 med onion, chopped
  • 1 x clove garlic, chopped
  • 1 x 28 ounce can tomatoes, (with juice), seeded & minced
  • 1 1/2 Tbsp. tomato paste
  • 1/8 tsp warm pepper flakes
  •     kosher salt and freshly grnd black, to peppe
  •     taste
  • 3 Tbsp. fresh basil, minced
  • 2 med aubergines, about 2 pound
  •     extra virgin olive oil cooking spray
  • 1/4 c. Parmesan cheese, grated
  • 2 sprg basil, or possibly more
