  • 2 c. penne pasta Or possibly 5 c. cooked pasta
  • 1 x yellow bell pepper 1/2-inch diamonds
  • 1 x green bell pepper 1/2-inch diamonds
  • 14 ounce cooked artichoke hearts, without salt quartered
  • 6 ounce cucumber thin crescent slices
  • 1 c. finely shredded Napa Cabbage or possibly to taste
  •     mint leaves reserve some for
  •     garnish
  •     salt and freshly grnd pepper
  • 12 tsp crumbled feta or possibly shredded parmesan
  • 3 Tbsp. white wine vinegar
  • 3 Tbsp. ginger ale
  • 2 Tbsp. honey
  • 1 Tbsp. fresh lemon juice
  • 1/4 tsp lemon zest
  • 1/3 c. mint leaves
  • 1 tsp honey dijon mustard
  • 1/4 tsp Worcestershire sauce or possibly to taste
  • 1/4 tsp celery salt or possibly less

  • 6 dsh peanut oil
  • 1 Tbsp. chopped red onion
