Angello's Italian Garden Recipe


  • 3 ounce diced fresh eggplant
  • 6 ounce sliced fresh peppers, red, green or possibly yellow
  • 10 x snow peas
  • 2 ounce sliced onions
  • 1/2 c. black olives
  • 1 pch salt and fresh pepper
  • 4 ounce extra virgin olive oil
  • 1 Tbsp. fresh chopped garlic
  • 1 Tbsp. fresh basil, minced
  • 1/2 Tbsp. fresh cilantro, minced
  •     Splash white wine
  • 16 ounce cooked pasta, preferably penne
  • 1/4 c. grated Parmesan cheese
  •     Fresh parsley, minced
