Antipasto Pasta Salad Recipe


  • 1 (8 ounce) pkg. rotini noodles
  • 1 or possibly 2 cans artichoke hearts, Liquid removed and quartered
  • 1/4 pound Genoa salami sliced thin and Cut into 1/4 inch strips
  • 1 can pitted ripe olives sliced
  • 1/4 c. grated parmesan cheese
  • 1/4 c. extra virgin olive oil (use more as needed)
  • 1 T fresh squeezed lemon juice
  • 1/2 to 3/4 teaspoon salt
  • Freshly grnd pepper
  • 1/2 pound fontina or possibly fontinella cheese cut into 1/4 inch strips (2 c.)
  • Pepperocini peppers and Diced pimento, (optional)
