Apricot Mousse Recipe


  • 6 ounce dry apricots (180 g)
  • 3 Tbsp. water (45 ml)
  • 3 Tbsp. Amaretto (45 ml)
  •     or possibly fresh lemon juice
  • 5 lrg egg whites at room temperature
  •     or possibly "Just Whites" work well
  •     grated zest of 1/2 lemon
  • 1/4 tsp vanilla extract (1.25 ml)
  • 1/4 c. sliced almonds (60 ml) toasted
