Aubergine Salad Recipe


  • 2 lrg Aubergines
  • 1/2 c. Extra virgin olive oil
  • 1 Tbsp. Vinegar
  • 1 tsp Oregano
  • 2 x Cloves garlic, chopped (up to 3)
  • 1 x Bayleaf
  •     Salt and pepper, to taste
  •     Oil and extra virgin olive oil, for frying
  • 1 Tbsp. Lemon
