Armenian Lentil Soup Recipe

Ingredients

  • 1 c. minced onion
  • 1/2 c. sliced carrots
  • 1/2 c. sliced celery
  • 3 c. peeled, cubed eggplant
  • 1 c. diced green pepper
  • 6 clv garlic, chopped
  • 6 c. stock (I use chicken)
  • 1 1/2 c. lentils
  • 1 1/2 c. minced tomato
  • 4 ounce dry apricots, sliced (yes!)
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp cayenne
  • 1 Tbsp. paprika
  • 1 1/2 tsp salt
  • 3 Tbsp. parsley
  • 1 Tbsp. mint

Description

Saute/fry Part 1 In Extra Virgin Olive Oil Till Lightly Browned. Add In Part 2. Simmer Till Lentils Are Tender. Adjust Seasonings To Your Taste And Garnish.
