Asparagus Salad Recipe


  • 28 x asparagus spears, trimmed
  • 1/2 c. plain nonfat yogurt
  • 1 Tbsp. blue cheese, crumbled
  • 1/4 c. freshly squeezed lemon juice
  • 1 Tbsp. snipped fresh chives
  • 1 x clove garlic, peeled and chopped
  • 2 x beefsteak tomatoes, core & cut into
  •     Salt and freshly grnd black pepper, to taste
  • 1/2 c. minced fennel leaves, (the feathery ends)
