Apple Barley Risotto Recipe


  •     Here's a new twist on risotto, made with barley instead of the traditional
  •     Italian Arborio rice, which makes a perfect fall apple accompaniment to roasted
  •     chicken.
  • 2 Tbsp. butter
  • 1 c. minced mushrooms
  • 1/4 c. finely diced red onion
  • 1 1/2 tsp chopped garlic
  • 1/2 c. dry white wine
  • 1 x Braeburn or possibly Fuji apple, unpeeled, cored and cut into 1/4 inch dice
  • 1/2 c. pearl barley
  • 2 1/2 c. chicken or possibly vegetable broth
  • 1 c. water
  • 1/4 c. grated high-quality Parmesan cheese
  • 1/4 c. coarsely minced hazelnuts, lightly toasted
  • 1/8 tsp black pepper
