Ingredients

  • 4 tomatoes, cut into wedges
  • 1 zucchini, thinly sliced
  • 7 ounce jar roasted red peppers, liquid removed & thinly sliced
  • 4 ounce sliced salami, cut into strips
  • 4 ounce button mushrooms, halved
  • 3 1/2 ounce pkg. sliced pepperoni
  • 1 sm. jar pitted olives, liquid removed
  • 8 radishes, sliced
  • 1 sm. clove garlic, chopped
  • 2 T lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 T Parmesan cheese, grated
  • 1 T parsley, minced
  • 1/4 c. extra virgin olive oil
