Antipasto Rice Recipe

Ingredients

  • 1 1/2 c. water
  • 1/2 c. tomato juice
  • 1 c. rice, uncooked
  • 1 tsp dry basil leaves
  • 1 tsp dry oregano leaves
  • 1/2 tsp salt, optional
  • 1 x 14 oz ca artichoke hearts, drain, quarter
  • 1/2 c. oil-pk tomatoes, drain, chop
  • 1 x 2 1/4 oz sliced rips olives, drain
  • 2 Tbsp. parsley, minced
  • 2 Tbsp. lemon juice
  • 1/2 tsp grnd black pepper
  • 2 Tbsp. parmesan cheese, grated

Description

Combine Water, Tomato Juice, Rice, Basil, Oregano And Salt In A 2 To 3 Qt Saucepan. Bring To A Boil; Stir Once Or Possibly Twice. Reduce Heat. Cover And Simmer Till Rice Is Tender…
