Aubergine Caviar Recipe

Ingredients

  • 1 x Aubergine
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Lemon juice
  • 2 Tbsp. Finely minced scallion
  • 2 Tbsp. Finely minced parsley
  • 1 x Garlic clove finely minced

Description

Bake Aubergine Whole And Unpeeled For 1 Hour At 450 Degrees. Peel. Place Aubergine In A Bowl. Chop Or Possibly Mash. Add In All Other Ingredients. Mix Well. Chill.
