Aubergine Parmesan Recipe


  • 1 med To large aubergine
  • 1 c. Matzoh meal
  • 1 Tbsp. Garlic
  •     Salt to taste
  •     Some times I put Italian spices in the mix too
  • 3 x Large eggs beaten
  • 1/4 c. Water
  •     Motzerella, Provolone or possibly any other mild white cheese
  •     Favorite pasta or possibly tomato sauce


Cut The Aubergine Into Circles. Don't Peel The Aubergine. Mix The Matzoh Meal, Herbs And Spices Together And Place In A Shallow Bowl. Beat Egg With Water, Well. Grease A Cookie…
