Apricot Muffins Recipe


  • 1 c. minced dry apricots
  • 1 c. boiling water
  • 1 c. sugar substitute or possibly sugar
  • 1/2 c. softened butter or possibly margarine
  • 1 c. lite lowfat sour cream
  • 2 c. all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp grated orange peel
  • 1/2 c. minced pecans--not too fine or possibly coarse-in the middle!


Soak Apricots In Boiling Water 5 Min. Drain And Throw Away Liquid. Cream Sugar And Butter, Add In Lowfat Sour Cream, Mix Well. Combine The Dry Ingredients And Stir Into Creamed Mix…
