Aubergine Spinach Curry Recipe


  • 1/4 c. Oil
  • 1 tsp Black mustard seeds
  • 12 x Garlic cloves, chopped
  • 2 lb Spinach, rinsed, dry, and finely minced
  • 1 med Aubergine cut into 1/2" cubes
  • 1 piece ginger root (1-inch) peeled and grated
  • 1/4 tsp Jalapeno chiles, chopped
  • 1/4 tsp Tumeric pwdr
  • 1/4 tsp Paprika
  • 1/2 tsp Grnd coriander
  • 1/2 tsp Grnd cumin
  • 2 med Tomatoes, finely minced
  •     Salt
  •     Cilantro sprigs, for garnish
