Ingredients

  • 2 lrg Garlic cloves, chopped
  • 1 lrg Onion, coarsely minced
  • 1 lrg Celery stalk, minced
  • 1 lrg Green pepper, minced
  • 2 Tbsp. Extra virgin olive oil (or possibly more)
  • 1 c. Fresh mushrooms, sliced
  • 1 med Aubergine, sliced 1/4"
  • 1/2 tsp Marjoram, dry
  • 1/2 tsp Thyme, dry
  • 1 tsp Oregano, dry
  • 1 can Tomatoes, diced (28 ounce.)
  • 2 c. Mozzerella cheese, grated
  •     Salt & pepper to taste
