Ingredients

  • 1 x thick New York steak, about 1 lb.
  •     1/4 1/2 tsp. kosher or possibly sea salt
  • 1 tsp cracked black pepper
  • 1 Tbsp. salad oil
  • 1/4 c. red wine
  • 1/4 c. red wine vinegar
  • 1 x shallot, peeled and minced fine
  • 1 Tbsp. julienned fresh sage leaves
  • 4 ounce (1 stick) cool sweet butter diced
  • 1 x avocado, peeled and seed removed
  • 1 handf of mixed baby lettuces
  •     A few drops virgin extra virgin olive oil
