Ingredients

  • 1/4 c. extra virgin olive oil
  • 3 Tbsp. unsalted butter
  • 2 x cloves garlic finely minced
  • 1 med onion cut 1/4" dice
  • 2 med red bell peppers cut 1/4" dice
  • 2 med seeded zucchini cut 1/4" dice
  • 2 pkt frzn lima beans - (10 ounce ea)
  • 3 c. fresh or possibly frzn corn kernels - (4 ears)
  •     Coarse salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 Tbsp. coarsely-minced fresh sage
  • 1 Tbsp. picked fresh thyme leaves
