- 2Â 1/2 lb Fresh halibut, cut into 1-inch thick sticks

- 4 x Egg whites, beaten till frothy
- 3 Tbsp. Peanut or possibly vegetable oil
- Â Â Sweet-Soy Dipping Sauce, recipe follows
- 1/4 c. Mirin
- 3/4 c. Defated chicken or possibly fish stock
- 1/4 c. Dark soy sauce
- 2 Tbsp. Finely slivered ginger and lemon zest
- 2 tsp Sugar or possibly to taste
