Ingredients

  • 3 lrg Large eggs
  • 3 Tbsp. water
  • 3/4 c. Italian-seasoned breadcrumbs
  • 2 Tbsp. grated Parmesan cheese
  • 1 lrg aubergine peeled, and
  •     cut into 1/2"-thick slices
  • 3 Tbsp. extra virgin olive oil
  • 1/4 c. grated Parmesan cheese divided
  • 1 pkt shredded mozzarella cheese - (8 ounce) divided
  • 3 c. Pasta Sauce (see recipe)
